Chef George Belesis Creates World Class Menu for Pacuare Lodge

Pacuare Lodge prides itself on giving our guests the most exclusive and luxurious local experience. The facilities are built to harmonize with the surrounding river and rainforests. And, our food is all locally sourced and prepared fresh daily. Recently, Pacuare Lodge invited a world class chef, George Belesis, to help our local chefs prepare our wonderful ingredients in a new and exciting way.

Preparing a new menu

George has been with us once before, and we knew that his food and his culinary skills were amazing. We are always looking to treat our guests to new things. Food is a universal language that everyone understands. Food is a great way to share our culture with our guests. Food plays with all senses and is a great bonding experience. So, we set out to create a new menu that would show off our local ingredients in new ways.

Locally sourced ingredients

The first step to a new and exciting menu is to find the best ingredients. The first ingredient in anything we do at Pacuare is sustainability. Therefore, George and our kitchen staff visited the farmer’s markets and our personal farm in Tuis to gather the best ingredients. Shopping at farmers markets and growing our own fruits, herbs, and veggies means always cooking with the seasons.

A complete culinary experience

George happily shared his culinary knowledge with our staff. He worked with us on everything from time management to decorative plating. And, he taught invaluable new cooking techniques to enhance our menu. We also upgraded our kitchen to include a Rational oven, sous-vide, and a Thermomix. Now we have all the tools and the knowledge to continue to create world-class cuisine for our guests.
