Diego Diaz: International Flavor, Costa Rican Soul

Diego Diaz brings a cosmopolitan flare to Pacuare Lodge. Although he’s only been with us for a few months, his impact is felt in the kitchen, bar, and beyond. Diego, our Food and Beverage Manager,  has been working in hospitality since he was 19. His career has afforded him the opportunity not only to travel around Costa Rica, but to live and work in Brazil and the United States, too.

From Costa Rica to Brazil to North Carolina to Pacuare Lodge

Diego speaks fluent English and Portuguese in addition to his native Spanish. So was it difficult for someone who has seen the world and lived in other cultures to come live and work in a remote part of Costa Rica? Not at all. Diego is an adventurous soul who is always seeking out new experiences. “I like to think that I’m adaptable to any situation. I embrace change and learning new things. In fact, I feel my time here at the lodge is very special, like they’re paying me to do something that I myself would pay to do. I love it here.”

A Truly Special Culinary Experience

Diego’s passion is evident in Pacuare Lodge. He focuses on hyper-local, fresh, organic ingredients. Then he combines traditional Costa Rican dishes with international styles and flavors.

Craft Cocktail Creator

Diego is also a master mixologist. His tropically inspired concoctions are the perfect beverage to have in hand as the sun goes down and the forest comes alive with the songs of the jungle. Be sure to try his signature cocktail, “La Caminata” (the hike), which bursts with flavor and reminds the palate that you are indeed in the middle of the rainforest – and it’s spectacular.

Turrialba Is Home

In his freetime, Diego enjoys running, swimming, and dancing to Latin music. He’ll need the exercise, because he also loves chicharrones, those meaty, fried pork rinds that are synonymous with parties and celebrations in Costa Rica.

Diego is originally from Turrialba, which is the closest town of consequence to Pacuare Lodge. Turrialba is known as a river rafting town, with the Pacuare and Reventazón rivers coursing through its boundaries. We are fortunate that Diego wanted to come home and continue his adventure with us in the heart of Costa Rica’s rainforest.
